A Delectable Baked Chicken and Rice Recipe with Vegetables & Spices

Ingredients for Baked Chicken and Rice:
- 4 boneless, skinless chicken breasts
- 2 cups long grain white rice
- 2 tablespoons olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 2 cups chicken broth
- 1 cup diced carrots
- 1 cup diced celery
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup frozen peas
Instructions for Baked Chicken and Rice:
- Preheat oven to 375°F.
- In a large baking dish, combine the rice, olive oil, onion, garlic, chicken broth, carrots, celery, thyme, paprika, basil, salt, and pepper. Stir until well combined.
- Place the chicken breasts on top of the rice mixture and sprinkle with salt and pepper.
- Cover the baking dish with aluminum foil and bake in the oven for 35 minutes.
- Remove the foil and add the frozen peas to the top of the rice mixture.
- Return the dish to the oven and bake for an additional 20 minutes, or until the chicken is fully cooked and the rice is tender.
