The Ultimate Guide to Making Authentic Chicken Biryani

  • 4-5 cloves
  • 1 cinnamon stick

  • 3 large onions, thinly sliced
  • 4 tablespoons ghee (clarified butter) or oil
  • 2-3 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 2 tomatoes, chopped
  • 1 cup fresh coriander leaves, chopped
  • 1 cup fresh mint leaves, chopped
  • 1 teaspoon saffron strands soaked in 1/4 cup warm milk
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 cup fried onions (for garnish)
  • 1/2 cup roasted cashew nuts (for garnish)

Instructions

Step 1: Marinating the Chicken

  1. In a large bowl, mix the yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, coriander powder, cumin powder, salt, and lemon juice.
  2. Add the chicken pieces to the marinade, ensuring they are well coated.
  3. Cover and refrigerate for at least 2 hours, or preferably overnight. This allows the chicken to absorb all the flavors and become tender.

Step 2: Preparing the Rice

  1. Rinse the basmati rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.
  2. In a large pot, bring 4 cups of water to a boil. Add the bay leaves, green cardamom pods, cloves, cinnamon stick, and salt.
  3. Add the rinsed rice and cook until it is 70-80% done. The rice should be partially cooked, as it will finish cooking during the layering process.
  4. Drain the rice and set it aside.

Step 3: Cooking the Chicken

  1. In a large pan, heat the ghee or oil over medium heat. Add the sliced onions and sauté until they turn golden brown. Remove half of the fried onions and set them aside for garnish.
  2. Add the green chilies and ginger-garlic paste to the remaining onions in the pan. Sauté for another 2-3 minutes until the raw smell disappears.
  3. Add the chopped tomatoes, coriander leaves, and mint leaves. Cook until the tomatoes become soft and the oil starts to separate.
  4. Add the marinated chicken to the pan, along with the garam masala, red chili powder, turmeric powder, and cumin powder. Mix well and cook until the chicken is tender and the gravy thickens. This should take about 15-20 minutes.

Step 4: Layering the Biryani

  1. In a heavy-bottomed pot or a Dutch oven, start with a layer of the cooked chicken and gravy at the bottom.
  2. Add a layer of partially cooked rice over the chicken.
  3. Sprinkle some of the saffron milk over the rice.
  4. Repeat the layers until all the chicken and rice are used up, finishing with a layer of rice on top.
  5. Garnish the top layer with the reserved fried onions, roasted cashew nuts, and a drizzle of the remaining saffron milk.

Step 5: Dum Cooking (Slow Cooking)

  1. Seal the pot with aluminum foil and place a lid on top to ensure no steam escapes. This process is called “dum” cooking.
  2. Place the sealed pot on a tawa (griddle) over low heat. Cook for 20-25 minutes. This allows the flavors to meld together and the rice to finish cooking without burning.
  3. Alternatively, you can cook the biryani in a preheated oven at 180°C (350°F) for 25-30 minutes.

Step 6: Serving the Biryani

  1. Once done, remove the pot from the heat and let it rest for 10 minutes before opening.
  2. Gently fluff the biryani with a fork to mix the layers without breaking the rice grains.
