It’s a day filled with joy, new beginnings, and, of course, delectable dishes. On this auspicious occasion, homes are adorned with colorful rangoli designs, and a Gudi (a bright green or yellow cloth adorned with brocade tied to a bamboo stick) is hoisted outside windows. The festival is incomplete without the preparation of traditional recipes that are passed down through generations. 5 Must-Try Gudi Padwa Dishes

1. Puran Poli

Ingredients:

  • 1 cup chana dal (split chickpeas)
  • 1 cup jaggery, grated
  • 2 cups all-purpose flour (for the dough)
  • Water as needed
  • A pinch of salt
  • ½ tsp cardamom powder
  • Ghee (clarified butter), for serving

Instructions:

  1. Boil chana dal until it is soft and cooked. Drain the water and mash the dal.
  2. In a pan, mix the mashed dal and jaggery on low heat until the jaggery melts and combines with the dal to form a thick paste. Add cardamom powder and mix well.
  3. Prepare a smooth dough with the flour, a pinch of salt, and enough water. Let it rest for 30 minutes.
  4. Divide the dough and the dal-jaggery mixture into equal portions.
  5. Roll out one portion of the dough into a small circle, place a portion of the filling in the center, and seal it by bringing the edges together.
  6. Gently roll this stuffed ball into a flatbread, ensuring the filling does not come out.
  7. Cook on a hot griddle until golden brown spots appear on both sides. Serve hot with a dollop of ghee.

2. Shrikhand

Ingredients:

  • 1 kg thick yogurt
  • ¾ cup powdered sugar
  • A pinch of saffron (soaked in 2 tablespoons warm milk)
  • ½ tsp cardamom powder
  • Chopped nuts and dried fruits, for garnishing

Instructions:

  1. Hang the yogurt in a muslin cloth for 4-6 hours to drain out the whey.
  2. Transfer the thick yogurt to a bowl, add powdered sugar, and mix well until smooth.
  3. Add the saffron milk and cardamom powder to the yogurt mixture and blend well.
  4. Chill in the refrigerator for an hour. Garnish with chopped nuts and dried fruits before serving.

3. Batata Bhaji

Ingredients:

  • 500g potatoes, peeled and sliced
  • 1 tsp mustard seeds
  • A pinch of asafoetida
  • 6-7 curry leaves
  • 2-3 green chilies, slit
  • ½ tsp turmeric powder
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves, for garnishing

Instructions:

  1. Heat oil in a pan. Add mustard seeds, asafoetida, curry leaves, and green chilies. Sauté for a few seconds.
  2. Add the sliced potatoes, turmeric powder, and salt. Mix well.
  3. Cover and cook on low heat until the potatoes are soft and cooked through.
  4. Garnish with chopped coriander leaves and serve hot.

4. Varan Bhaat

Ingredients:

  • 1 cup toor dal (split pigeon peas)
  • ½ tsp turmeric powder
  • Salt to taste
  • 2 cups rice
  • 2 tbsp ghee
  • 1 tsp cumin seeds
  • A pinch of asafoetida
  • Chopped coriander leaves, for garnishing

Instructions:

  1. Cook the toor dal with turmeric powder, salt, and enough water until soft and mushy.
  2. In another pot, cook rice until fluffy and set aside.
  3. In a small pan, heat ghee and add cumin seeds and asafoetida. Pour this tempering over the cooked dal.
  4. Serve the dal hot with rice, garnished with chopped coriander leaves.

5. Mango Lassi

Ingredients:

  • 2 ripe mangoes, peeled and chopped
  • 2 cups thick yogurt
  • ½ cup milk
  • 4-5 tbsp sugar (adjust as per taste)
  • A pinch of cardamom powder
  • Ice cubes, for serving

Instructions:

  1. Blend mangoes, yogurt, milk, sugar, and cardamom powder until smooth.
  2. Pour into glasses over ice cubes and serve chilled.
