Creamy, rich and loaded with buttery caramel, this homemade caramel ice cream tastes far more indulgent than the effort it takes to make. And the best part? You don’t need an ice cream maker.
1. Make the caramel:
Add brown sugar and butter to a small pan over low heat. Stir until melted and smooth. Add a pinch of salt and let it cool slightly.
2. Whip the cream:
Beat the chilled heavy cream until soft peaks form.
3. Bring it together:
Gently fold in the condensed milk and vanilla. Add the cooled caramel and swirl it through the mixture. Don’t overmix if you want beautiful caramel ribbons.
4. Freeze:
Transfer to a covered container and freeze for 6 to 8 hours, or until firm.
Take the ice cream out about 5 to 10 minutes before serving. Add a drizzle of warm caramel and a tiny sprinkle of sea salt on top for that irresistible salted-caramel finish.
