Culinary Tiranga: Celebrate Independence Day with a Layered Tricolour Panna Cotta

Few traditions bring people together like shared meals on national holidays. If you’re looking for a refreshing, show-stopping dessert to anchor your August 15 celebrations, this Tricolour Panna Cotta delivers vibrant natural colors without artificial dyes, pairing smooth coconut cream with fresh mango and spinach-infused pistachio layers.

Saffron Layer (Orange): Sweet, ripe Alphonsos or Kesar mangoes balanced with a splash of passionfruit juice.

White Layer (Center): Silky coconut cream gently infused with green cardamom and vanilla bean.

Green Layer (Base): Nutty pistachio paste blended with a handful of fresh spinach for a deep emerald hue without changing the sweet profile.

Ingredients Checklist

For the Green Base:

  • 1 cup Whole milk (or unsweetened almond milk)
  • 1/2 cup Heavy cream or coconut cream
  • 1/4 cup Shell-less pistachios (blanched)
  • 1 small hand Fresh baby spinach leaves (blanched in boiling water for 10 seconds to lock in bright green color)
  • 2.5 tbsp Sugar
  • 1 tsp Unflavored gelatin powder (or Agar-Agar for a vegetarian alternative)
  • 2 tbsp Cold water

For the White Center:

  • 1 cup Heavy cream
  • 1/2 cup Coconut milk
  • 3 tbsp Sugar
  • 2 Green cardamom pods (lightly crushed)
  • 1 tsp Pure vanilla extract
  • 1 tsp Unflavored gelatin powder
  • 2 tbsp Cold water

For the Orange Top:

  • 1 cup Pureed fresh mango (Kesar or Alphonso works best)
  • 1/4 cup Fresh orange juice
  • 1.5 tbsp Sugar (adjust based on sweet ripeness of the mango)
  • 1 tsp Unflavored gelatin powder
  • 2 tbsp Cold water

Step-by-Step Preparation

Step 1: Set Green Layer

❄️ Chill 2 hrs to fully set

1. Build the Emerald Green Layer

In a small bowl, bloom the gelatin by sprinkling it over 2 tbsp of cold water. Let it sit for 5 minutes.

Blend the pistachios, blanched spinach, and milk together in a high-speed blender until completely smooth. Strain through a fine-mesh sieve.

In a saucepan over low heat, combine the pistachio milk, cream, and sugar until warm (do not boil). Remove from heat, stir in the bloomed gelatin until fully dissolved.

Pour evenly into dessert glasses. Place in the refrigerator for 45 to 60 minutes until firm to the touch.

2. Layer the Aromatic White Center

Bloom the second portion of gelatin in cold water.

Heat the heavy cream, coconut milk, sugar, and crushed cardamom pods on low heat for 5 minutes to infuse flavors. Strain out the cardamom pods.

Stir the bloomed gelatin and vanilla into the warm mixture until smooth.

Gently pour the white mixture over the set green layer using the back of a spoon to avoid breaking the bottom surface. Return glasses to the fridge for another 45 to 60 minutes.

3. Finish with the Bright Saffron Top

Bloom the remaining gelatin in cold water.

Warm the mango puree, orange juice, and sugar in a small saucepan over low heat. Stir in the gelatin until dissolved.

Allow the mango mixture to cool to room temperature before pouring it over the chilled white layer.

Chill the completed glasses in the refrigerator for at least 2 to 3 hours (or overnight) to set fully.

Plating & Garnish Tips

Garnish: Top each glass with a light dusting of crushed pistachios, silver leaf (Varq), and fresh mint sprigs right before serving.
