If you’re looking for a refreshing, show-stopping dessert to anchor your August 15 celebrations, this Tricolour Panna Cotta delivers vibrant natural colors without artificial dyes, pairing smooth coconut cream with fresh mango and spinach-infused pistachio layers.

Saffron Layer (Orange): Sweet, ripe Alphonsos or Kesar mangoes balanced with a splash of passionfruit juice.
White Layer (Center): Silky coconut cream gently infused with green cardamom and vanilla bean.
Green Layer (Base): Nutty pistachio paste blended with a handful of fresh spinach for a deep emerald hue without changing the sweet profile.
In a small bowl, bloom the gelatin by sprinkling it over 2 tbsp of cold water. Let it sit for 5 minutes.
Blend the pistachios, blanched spinach, and milk together in a high-speed blender until completely smooth. Strain through a fine-mesh sieve.
In a saucepan over low heat, combine the pistachio milk, cream, and sugar until warm (do not boil). Remove from heat, stir in the bloomed gelatin until fully dissolved.
Pour evenly into dessert glasses. Place in the refrigerator for 45 to 60 minutes until firm to the touch.
Bloom the second portion of gelatin in cold water.
Heat the heavy cream, coconut milk, sugar, and crushed cardamom pods on low heat for 5 minutes to infuse flavors. Strain out the cardamom pods.
Stir the bloomed gelatin and vanilla into the warm mixture until smooth.
Gently pour the white mixture over the set green layer using the back of a spoon to avoid breaking the bottom surface. Return glasses to the fridge for another 45 to 60 minutes.
Bloom the remaining gelatin in cold water.
Warm the mango puree, orange juice, and sugar in a small saucepan over low heat. Stir in the gelatin until dissolved.
Allow the mango mixture to cool to room temperature before pouring it over the chilled white layer.
Chill the completed glasses in the refrigerator for at least 2 to 3 hours (or overnight) to set fully.
Garnish: Top each glass with a light dusting of crushed pistachios, silver leaf (Varq), and fresh mint sprigs right before serving.
