  • 1 teaspoon cumin seeds
  • 1 bay leaf
  • 2-3 cloves
  • 1-inch cinnamon stick
  • 2-3 green cardamom pods
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon kasuri methi (dried fenugreek leaves)
  • 1/4 cup fresh cream
  • Salt to taste
  • Fresh coriander leaves (for garnish)

Instructions

Step 1: Preparing the Paneer

  1. Fry the Paneer:
  • Heat 2 tablespoons of butter or oil in a pan over medium heat.
  • Add the paneer cubes and fry until they are golden brown on all sides. This usually takes about 4-5 minutes.
  • Remove the paneer from the pan and place it on a paper towel to drain any excess oil. Set aside.

Step 2: Making the Tomato-Cashew Paste

  1. Cook the Tomatoes and Onions:
  • In the same pan, add 1 tablespoon of oil.
  • Add the chopped onions and sauté until they turn translucent.
  • Add the ginger-garlic paste and green chilies (if using), and sauté for another 2-3 minutes until the raw smell disappears.
  1. Blend with Cashews:
  • Add the chopped tomatoes and cashew nuts to the pan.
  • Cook until the tomatoes are soft and mushy, about 10 minutes.
  • Allow the mixture to cool slightly, then transfer it to a blender. Blend until you get a smooth paste. Set aside.

Step 3: Cooking the Gravy

  1. Spice Tempering:
  • In the same pan, add 2 tablespoons of butter.
  • Once the butter melts, add cumin seeds, bay leaf, cloves, cinnamon stick, and cardamom pods. Sauté for a minute until fragrant.
