Tandoori Tofu Tikka Masala with Creamy Cashew Korma (Vegetarian Delight!)

Calling all vegetarians and adventurous eaters! Are you ready to tantalize your taste buds with a fusion explosion of flavors? Tandoori Tofu Tikka Masala with Creamy Cashew Korma combines the smoky goodness of tandoori marination with the creamy richness of a cashew korma, creating a dish unlike any you’ve experienced before.

A Twist on Tradition:

Traditionally, tikka masala involves succulent pieces of marinated chicken or paneer (Indian cottage cheese) cooked in a creamy tomato sauce. This recipe takes a delicious turn by using firm tofu, offering a protein-packed vegetarian alternative.

Let’s Get Cooking! (Approx. 45 minutes)

Ingredients:

Tofu

For the Tandoori Tofu Tikka:

  • 1 block (400g) firm tofu, drained and pressed
  • 1/2 cup thick yogurt (such as Greek yogurt)
  • 1 tbsp lemon juice
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala powder
  • 1/4 tsp coriander powder
  • 1/4 tsp cumin powder
  • 1/4 tsp smoked paprika (for that tandoori twist!)
  • Salt to taste
  • 1 tbsp vegetable oil

For the Creamy Cashew Korma:

  • 1 tbsp vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 green chili pepper, chopped (adjust according to spice preference)
  • 1 tsp cumin seeds
  • 1/2 tsp coriander seeds
  • 1 bay leaf
  • 1 cinnamon stick
  • 2 cloves
  • 1 (400g) can diced tomatoes
  • 1/2 cup cashew nuts, soaked for 30 minutes
  • 1/2 cup water or vegetable stock
  • 1 tbsp heavy cream (optional, for extra richness)
  • 1 tsp sugar
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions:

1. Marinate the Tofu:

  • Cut the tofu into bite-sized cubes.
  • In a bowl, combine yogurt, lemon juice, ginger-garlic paste, spices (including paprika), and salt.
  • Add the tofu cubes and toss to coat them evenly.
  • Marinate for at least 30 minutes, or up to overnight for deeper flavor.

2. Prepare the Cashew Korma:

  • Heat oil in a pan or pot over medium heat.
  • Add cumin and coriander seeds, bay leaf, cinnamon stick, and cloves. Let them splutter for a few seconds.
  • Add chopped onion and cook until softened and translucent.
  • Add ginger, garlic, and green chili pepper. Sauté for another minute.

3. Simmering the Sauce:

  • Add the diced tomatoes and cook for a few minutes until they soften and release their juices.
  • Drain the soaked cashews, reserving the soaking liquid.
  • Grind the cashews into a smooth paste, adding some reserved soaking liquid if needed.

4. Creamy Cashew Delight:

  • Add the cashew paste and water/stock to the pan with the cooked tomatoes.
  • Season with salt and sugar to taste.
  • Bring to a simmer and cook for 10 minutes, allowing the flavors to meld.
  • Stir in heavy cream (optional) for extra richness.

5. Cook the Tofu:

  • While the korma simmers, heat oil in a separate pan or grill pan.
  • Remove the tofu cubes from the marinade and arrange them in a single layer in the pan.
  • Cook for a few minutes on each side until golden brown and slightly crispy.

6. The Grand Finale:

  • Add the cooked tofu cubes to the creamy cashew korma sauce.
  • Gently stir to combine and heat through for a couple of minutes.

7. Time to Plate!

  • Serve the Tandoori Tofu Tikka Masala hot, with a bed of rice or naan bread.
  • Garnish with fresh cilantro for a burst of color and aroma.

Tips:

  • You can grill the tofu cubes instead of pan-frying for an extra smoky flavor.
  • Adjust the amount of chili pepper according to your spice preference.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
  • Feel free to experiment with different vegetables to add more variety to your dish. Chopped bell peppers, peas, or cauliflower would work well.

This unique recipe combines the best of both worlds: the bold, smoky flavors of tandoori and the creamy richness of a cashew korma. So, ditch the usual and embark on a flavor adventure with this Tandoori Tofu Tikka Masala! It’s a vegetarian delight that’s sure to tantalize your taste buds and impress your dinner guests.
