A Delectable Baked Chicken and Rice Recipe with Vegetables & Spices

Perfect for a cozy night in, this classic recipe is elevated with the addition of aromatic spices and tender vegetables, all baked to perfection in one pan. Ingredients for Baked Chicken and Rice:

  • 4 boneless, skinless chicken breasts
  • 2 cups long grain white rice
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup frozen peas

Instructions for Baked Chicken and Rice:

  1. Preheat oven to 375°F.
  2. In a large baking dish, combine the rice, olive oil, onion, garlic, chicken broth, carrots, celery, thyme, paprika, basil, salt, and pepper. Stir until well combined.
  3. Place the chicken breasts on top of the rice mixture and sprinkle with salt and pepper.
  4. Cover the baking dish with aluminum foil and bake in the oven for 35 minutes.
  5. Remove the foil and add the frozen peas to the top of the rice mixture.
  6. Return the dish to the oven and bake for an additional 20 minutes, or until the chicken is fully cooked and the rice is tender.
  7. Serve hot and enjoy!
