Super Easy to Make Korean Cheese Corn Recipe

Sweet corn, melted cheese, a little butter and a golden, bubbling top. Korean cheese corn is the kind of comfort food that turns a handful of simple ingredients into something ridiculously satisfying.

Popular in Korean restaurants, this creamy corn dish combines the natural sweetness of corn with mayonnaise, mozzarella cheese and a hint of seasoning. It is often served sizzling hot as a side dish, but it also makes a delicious evening snack for anyone who loves cheesy food.

Easy Korean Cheese Corn Recipe

Ingredients

  • 1½ cups sweet corn kernels, fresh or frozen
  • 1 tablespoon butter
  • 2 tablespoons mayonnaise
  • ½ cup grated mozzarella cheese
  • 1 tablespoon finely chopped spring onions
  • ½ teaspoon sugar, optional
  • Salt and black pepper to taste
  • A pinch of chilli flakes, optional

Method

1. Prepare the corn: If using frozen corn, thaw it first. Drain the kernels well so excess water does not make the dish soggy.

2. Sauté in butter: Heat the butter in a pan over medium heat. Add the corn and sauté for 2 to 3 minutes until heated through.

3. Make it creamy: Turn the heat low and stir in the mayonnaise, sugar if desired, black pepper and a little salt. Mix until the corn is evenly coated.

4. Add the cheese: Spread the corn evenly in an oven-safe dish or a covered skillet. Sprinkle the mozzarella generously over the top.

5. Melt and brown: Cover the skillet and cook on low heat for 3 to 5 minutes until the cheese melts. For a golden top, place the oven-safe dish under a hot grill for a few minutes, watching carefully.

6. Garnish and serve: Finish with chopped spring onions and chilli flakes. Serve immediately while the cheese is warm, stretchy and delicious.

Tips for the Best Korean Cheese Corn

Use mozzarella for that classic stretchy cheese pull. A little cheddar can add a sharper flavour, while a pinch of smoked paprika or chilli flakes gives the dish extra character.

Avoid adding too much salt before tasting, because mayonnaise and cheese already contribute some saltiness. If you prefer a lighter version, replace part of the mayonnaise with plain Greek yoghurt, although the texture and flavour will be slightly different.
