1. Prepare the potatoes: Peel the potatoes and cut them into thin fingers. Rinse thoroughly to remove excess starch, then pat completely dry.
2. Coat and fry: Toss the potato fingers with cornflour, all-purpose flour, salt and pepper. Fry in hot oil until golden and crispy. For a lighter option, brush with oil and air-fry at 200°C until crisp, turning halfway through.
3. Prepare the sauce: Heat a tablespoon of oil in a wok. Add garlic and ginger, sauté briefly, then add onion and capsicum. Stir-fry for two minutes while keeping the vegetables slightly crunchy.
4. Add the flavour: Mix in soy sauce, ketchup, chilli sauce, vinegar and sugar. Add a tablespoon or two of water if needed, then cook until the sauce becomes glossy.
5. Toss and serve: Add the crispy potatoes and toss quickly until coated. Garnish with spring onions and sesame seeds. Serve immediately for the best crunch.
The biggest mistake is adding the fried potatoes to the sauce too early. Prepare the sauce separately and toss everything together just before serving. This keeps the potatoes crisp for longer.
For extra heat, add chopped green chillies. If you prefer a sweeter version, increase the ketchup slightly.
