Crispy Chilli Potatoes: The Addictive Indo-Chinese Snack You Can Make At Home

Some snacks are difficult to stop eating after the first bite, and crispy chilli potatoes are definitely one of them. Crunchy on the outside, soft inside, and coated in a spicy, sweet and tangy sauce, this popular Indo-Chinese dish turns ordinary potatoes into something seriously delicious.

Whether served as a party starter, an evening snack or a side dish with noodles, crispy chilli potatoes deliver restaurant-style flavour with simple ingredients from your kitchen.

“The best comfort food doesn’t need fancy ingredients. Sometimes, all you need is a potato, a little chilli and a perfectly sticky sauce.”

Easy Crispy Chilli Potatoes Recipe

Prep Time:15 minutes
Cook Time:20 minutes
Serves:2

Ingredients

  • 3 medium potatoes
  • 3 tablespoons cornflour
  • 1 tablespoon all-purpose flour
  • 1 tablespoon oil, plus oil for frying
  • 5 garlic cloves, finely chopped
  • 1 teaspoon chopped ginger
  • 1 small onion, diced
  • 1 capsicum, sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon tomato ketchup
  • 1 teaspoon red chilli sauce
  • 1 teaspoon vinegar
  • 1 teaspoon sugar, optional
  • 2 tablespoons spring onions, chopped
  • Salt and pepper to taste
  • Sesame seeds, optional

Method

1. Prepare the potatoes:Peel the potatoes and cut them into thin fingers. Rinse thoroughly to remove excess starch, then pat completely dry.

2. Coat and fry:Toss the potato fingers with cornflour, all-purpose flour, salt and pepper. Fry in hot oil until golden and crispy. For a lighter option, brush with oil and air-fry at 200°C until crisp, turning halfway through.

3. Prepare the sauce:Heat a tablespoon of oil in a wok. Add garlic and ginger, sauté briefly, then add onion and capsicum. Stir-fry for two minutes while keeping the vegetables slightly crunchy.

4. Add the flavour:Mix in soy sauce, ketchup, chilli sauce, vinegar and sugar. Add a tablespoon or two of water if needed, then cook until the sauce becomes glossy.

5. Toss and serve:Add the crispy potatoes and toss quickly until coated. Garnish with spring onions and sesame seeds. Serve immediately for the best crunch.

The Secret to Extra-Crispy Potatoes

The biggest mistake is adding the fried potatoes to the sauce too early. Prepare the sauce separately and toss everything together just before serving. This keeps the potatoes crisp for longer.

For extra heat, add chopped green chillies. If you prefer a sweeter version, increase the ketchup slightly.

Final Bite

Crispy chilli potatoes are proof that a few everyday ingredients can create a snack that feels like a restaurant favourite. Serve them hot, share them with friends, or make a batch for your next movie night. Just remember to keep some aside before everyone reaches for seconds!
