In a major move for consumer safety and menu transparency, food delivery leader Zomato announced a strict, zero-tolerance ban on restaurants listing “analogue” or synthetic dairy dishes across its platform.
The decision comes following heightened scrutiny by state food safety authorities regarding imitation dairy ingredients flooding commercial kitchens. Under the new directive, dishes containing synthetic dairy substitutes such as analogue paneer, fake cheese blends, or vegetable oil-based creams have been delisted immediately.
Analogue or synthetic dairy refers to manufactured food products designed to replicate the taste, texture, melting performance, and visual appearance of authentic dairy products like traditional paneer, cheese, butter, or cream.
Instead of relying on natural milk fat and milk solids, manufacturers substitute those ingredients with cheap hydrogenated vegetable oils (such as palm oil), starches, emulsifiers, plant proteins, and artificial flavor enhancers. While these ingredients are frequently used by commercial kitchens to cut costs and extend shelf life, they often leave consumers believing they are eating pure dairy when they are actually consuming heavily processed vegetable fat blends.
While analogue dairy ingredients are not inherently toxic when produced under strict hygienic conditions, the lack of consumer disclosure poses significant nutritional and health concerns.
To enforce the mandate, Zomato has issued clear operational instructions to all partner restaurants. Listed kitchens must complete an immediate review of supplier ingredient declarations, replace imitation items with genuine milk-derived products, or permanently remove non-compliant dishes from their digital menus.
