These chocolate puddings, also known as chocolate fondant or lava cakes, have a beautiful gooey centre and make an outstanding dinner party dessert with little effort.

Step 1: Pre Heat the Oven
Pre-heat the oven to 200°C/180°F fan/gas 6. Place six dariole basins or moulds on a baking tray before greasing the moulds on all sides with butter.
Step 2: Melt the chocolate
Combine 100g of butter and 100g of finely chopped dark chocolate in a heatproof bowl. Set the bowl over a pan of hot water, or you can melt the ingredients in the microwave in 30-second intervals on a low setting. Stir until the mixture is smooth. Set aside for 15 minutes to gradually cool down.
Step 3: Whisk it well
Using an electric hand whisk combine 50g of plain flour, 150g of light brown soft sugar, and 3 large eggs, one at a time. To fill the darioles or basins, divide the mixture in half.
Step 4: Time to bake
Now you can refrigerate the mixture until you’re ready to bake them. Bake for 16 minutes straight from frozen, or bake for 10-12 minutes until the tops are firm to the touch but the middles are still sticky gooey.
Step 5: Serve
Gently run a knife around the edge of each pudding before turning out onto serving plates and serving with single scoop of ice cream.
